ORR student whips up gourmet cupcakes

There’s no scrimping with the butter in Mattie Boyle’s cupcakes.
“As she continued to make cupcakes, our family continued to grow larger and larger,” joked her mother Leslie.
Mattie, a Mattapoisett resident and senior at Old Rochester Regional High School, began making gourmet cupcakes after receiving a starter kit two years ago.
Now the budding baker has been accepted to culinary school at Johnson and Wales University in Charlotte, North Carolina and has frequent requests to make her decorated cupcakes.
With her mom as sous-chef and “fondant queen,” Mattie has created a number of specialty cupcakes, including a chocolate coffee Kahlua variety and one with a peanut butter cup center.
When asked to pick a favorite, Mattie said, “I love them all.”
Perfecting her cupcakes took trial and error and many instructional videos on Youtube, said Mattie.
Now she has a catalog of fancy cupcakes, including Buzz Lightyear and Woody from “Toy Story.”
As word amongst her family and friends has spread, Mattie’s services are in high demand for everything from birthday parties to baby showers.
Most recently, Mattie offered up some of her trade secrets for kids at the Mattapoisett Library.
Among her recommendations are using good quality vanilla beans for cupcakes and frosting.
For good frosting, she also advised, “Take your butter out before you cook or else you’re going to get butter chunks.”
With graduation coming up soon, Mattie is still on the fence about going to Johnson and Wales, but she is considering combining her interests in baking and business in the future.
“I want to maybe open up my own cupcake business,” she said.
