MATTAPOISETT — Old Rochester Regional's head football coach Bryce Guilbeault will be opening a new restaurant in town.
Guilbeault, 44, has been in the restaurant business for the last 26 years, and he has been the general manager for the Brew Fish Bar & Eatery in Marion for the last seven years. He said it was his "lifelong dream to always go out on my own and open a restaurant."
The new eatery, Kokobo's Coastal Cantina, will be at 20 County Road, where former restaurant What the Taco used to be. The name Kokobo was inspired by the names of his two dogs combined into one word.
Guilbeault said Kokobo's will follow the layout of the previous restaurant. The venue will hold approximately 60 people indoors and 30 people outdoors.
At its meeting on Tuesday, Sept. 22, the Select Board approved an alcohol license and common victualler license for the business. It also approved an entertainment license for live, non-amplified acoustic music during normal business hours. The entertainment license also includes the use of four televisions.
Guilbeault is shooting for 15 employees and an opening date of mid October or early November.
