MATTAPOISETT — Old Rochester Regional High School's head football coach Bryce Guilbeault will soon lead a very different kind of team.
Guilbeault is opening a new restaurant at 20 County Road, which was formerly What the Taco. His new business took a big step forward with the approval of alcohol and entertainment licenses at Tuesay, Sept. 22 Select Board Meeting.
He has been in the restaurant business for the last 26 years, and he has been the general manager for the Brew Fish Bar & Eatery in Marion for the last seven years.
He said it was his "lifelong dream to always go out on my own and open a restaurant."
The new eatery will be called Kokobo's Coastal Cantina, inspired by the names of his two dogs combined into one word.
Guilbeault said Kokobo's will follow the layout of the previous restaurant. The venue will hold approximately 60 people indoors and 30 people outdoors.
At its Tuesday meeting, the Select Board approved an alcohol license and common victualler license for the business.
It also approved an entertainment license for live, non-amplified acoustic music during normal business hours. The entertainment license also includes the use of four televisions.
Guilbeault is planning to operate with 15 employees and hopes to open in mid October or early November.
